Morty’s Oyster Stand set to open in The Hamptons this summer

Morty’s Oyster Stand (2167 Montauk Highway, Amagansett, NY, www.mortysoysterstand.com) will open at the site of the former Cyril’s in the Hamptons in June. Jeremy Morton and Jack Luber partner with hospitality veteran Charles Seich of critically acclaimed Ferris in New York City to create a casual, cool and refined restaurant and bar inspired by sustainable seafood, East Coast Oysters, and coastal cuisine.

The team has tapped notable chef Sam Talbot, who first put The Surf Lodge on the map, to head the kitchen of this summer seafood destination. With both indoor and outdoor dining, the 150 patron space features Hamptons-style decor with navy cedar shingles and grey accents throughout the space.

Chef Sam Talbot’s menu will feature sustainably sourced seafood and the best of local, seasonal produce. The menu begins with a variety of rotating fresh oysters (wellfleet, nauti pilgrim, moonstone, pemaquids) brought in daily, as well as additional raw bar items like littleneck clams and shrimp cocktail and Maine Uni. Starters include Heirloom Tomato Salad with melon, basil and citrus; Whitefish and Summer Squash Ceviche with local fresh herbs; Olive Oil Steamed Mussels with heirloom tomatoes, summer corn, cilantro, and golden garlic; and Fried Ipswich Clams with chili aioli.

The mains include Grilled Local Squid with zucchini, macadamia pesto, and pineapple serrano vinegar; Cioppino with local seafood and grilled bread; Fish En Papillote with lemon, mushrooms, and sofrito; Morty’s Lobster Roll; Marinated Hanger Steak with roasted mushroom chimichurri and garlicky greens; andThe Best Fried Chicken with spicy honey and celeriac slaw.

The menu also includes sides like Lobster Mac and Cheese and Skinny Frenchies. Desserts such as Grilled Pineapplewith black sesame and coconut caramel, and a BBC Ice Cream Sandwich round out the menu. For lunch, the restaurant will add menu items like Fish Tacos and a Griddled Chicken Sandwich with spicy honey and celeriac slaw. There’s also a special kid’s menu available for families.
