While scotch has long stood front and center on the cold-weather stage, rum has finally shed its old sugar-filled, tiki cocktail image to emerge gracefully into the world of premium drinking.

Premium rums such as Santa Teresa 1796, a barrel-aged Venezuelan rum, are finding their place among typical scotch and whisky drinkers where its smooth texture and touchstones of vanilla, brown sugar, and baking spices provide a comforting familiarity.

Debunking preconceived notions of what rum is, or ought to be, turns out to be a decidedly difficult task. But as the spirit’s super-premium sector finds itself in a period of exceptional growth, showing an approximately 10 percent increase last year, rum is poised to draw in dark spirit drinkers this autumn to battle the chill.

Cocktails such as the Old Fashioned and Manhattan can be made with rum instead of scotch or whisky for a fun twist on the classic drink. Using dark, dry rum instead of gin in the Negroni elevates this refreshing summer aperitif and makes it a great fit for the cooler weather.

Rum Manhattan

2 oz dark, aged Santa Teresa 1796 rum
1 oz Martini Rosso
3 dashes angostura

Build all ingredients in a mixing glass. Stir 30–40 seconds. Pour over a martini glass. Garnish with a brandied cherry.
